With a product orientated supermarket/discount/warehouse model, it's about lowest possible price, lowest possible standard of service/quality, lowest possible speed (customers can stay longest time and given maximum exposure on advertisements around them).

On the other hand, with a service orientated model, we have highest possible price, highest possible service/quality, quickest possible speed (so staff can serves next waiting customer).
